'Tis the season for baking cookies!    Ginger cookies are a favorite of mine these grain free cookies sweetened with coconut sugar are a great treat! The kids and I are on school vacation!   We are off the Colorado tomorrow to see family and go home to Crested Butte for a week!   To say the kids are excited is an understatement.   When we told them we were going home for Christmas break Max said, "This is the best present I could ever get, ever!"  We have not only had the countdown for Christmas this year, but the countdown for Colorado! Caramelized onions are their own are pretty amazing but combine it with fennel and it becomes magical. This is a fairly simple dish to make and it is full of flavor.   If you have a houseful of guests coming for the holidays, this could be a great dinner.  You could do this with a whole chicken or add some chicken legs and thighs to make more.
