This is a one pan meal that is easy to make and easy to clean up.   It takes about 15 minutes to put together and the rest is hands off. School is back in session and family dinners are all the more important.   Mornings tend to be on the hectic side and then we all go our separate ways for a good part of the day.   Dinner is our time to be together as a family and tell each other about our day while enjoying a healthy home cooked meal. My kids love  gummy snacks!   I have bought the packaged variety for a while but realized how simple and how much healthier it is to make your own.  I have been making homemade jello this past year from grass-fed gelatin that I get on Amazon.com and decided to try making gummy snacks too,  which is essentially a thicker, more condensed jello.  I use the unflavored variety of  Great  Lakes Gelatin and one bottles has about 65 1 tablespoon servings, so it lasts a long time. This recipe  takes about 5-10 minutes to make and then pop it in the fridge for 30-60 minutes to harden. Grass-fed gelatin is therapeutic in nature as it is great for (more…)

I made this salad the other day for a party and my husband, Eric, tasted it and said. " This is the way we should always eat cucumbers."   I couldn't have asked for a better response. This is one of my favorite summer salads.  I grew up making a different version of this which included a significant amount of white sugar and white vinegar making it not so good for you.   I set out to make a healthier, yet even more delicious version of that salad.
