This is  comfort food at it's best.  A family style meal that is so tasty.  So filling.   So good for the body and soul.  Yum! I tell Max that in high school I won't be able to make enough meatballs- he and his friends will eat them all.  But for now, he's not biting.  So until then,  I freeze the leftovers.   Eric takes them for lunch.  I defrost some here and there for an easy dinner.  They don't usually last too long.  I'll have to double the recipe when my kids get a bigger appetite and are more adventurous. This is a wonderful and simple lunch for one.   I am often rushing from one place to the next during the day, or home cooking and working on recipes for this blog and cooking classes all the while grazing on food.  I admit I have a hard time sitting down to a nice lunch.  But when I do, I feel more calm and collected.  I try to just eat the meal.  Not check my email, Instagram account or Facebook.   I try not to multitask.  This is not easy for me.  At all.  I rarely make it through the meal just sitting there focused on the meal.  But I strive to.  One day I hope to be better at it.…

In the spirit of Valentine's Day, I give you a delectable chocolate dessert, in mini form. Have you heard of the 80/20 rule?  Eat well 80% of the time.  This recipe applies to the 20%.  Strictly for enjoyment.   And these won't disappoint. Have you had a chocolate roll before?  This is a recipe I adapted from my Aunt Nancie, who made this cake for many special occasions.  I didn't try to make one myself until this past Christmas.   This cake recipe calls for very little flour and swapping out regular flour for almond flour worked well.  I assume any gluten free flour would work okay, but I have only tested this with almond flour. My sweet girl can't get enough of these.  Little does she know one of the main ingredients is cashews.  I try to throw them in the blender and cover them with the milk and eggs before she's any the wiser.  My seven year old, on the other hand, saw the cashews  go in and became very inquisitive.
