Radish and Sweet Pea Salad

Radish and Sweet Pea Salad

Appetizers & Sides,Lunch & Dinner,Salad & Soup

I love the colors of all the fresh vegetables and flowers at the farmers market.    Purple and red radishes, orange carrots, bright tomatoes, green lettuces, cherries and berries.  It's  a beautiful sight.   It's almost as colorful as hiking through the wildflowers in Crested Butte.     I have really grown to love radishes over the last couple years.  They are a bit spicy and pungent with a nice crunch.  And they are so good for you.   Full of vitamins and minerals, they help detox the liver and aid in digestion.  And they are naturally cooling, which we all need this time of year.   Paired with mint, sweet peas and goat cheese, this salad is refreshing on a hot day. This…

Happy Summer! Wow- June when by so fast and was full of very fun days.  I can not believe tomorrow is the start of July.  How did that happen. Summer is such a busy time full of outdoor fun and festivities.   If you are looking for a healthy and delicious side dish to bring to a summer gathering, try this golden beet salad.  It looks pretty and so tasty.  You can roast the beets a day or two ahead of time ( maybe at night when it's cooled down a bit- it's even been darn hot at 9,000 feet this summer!) and keep them in the fridge until you are ready. Curried Cauliflower Salad with Celery, Mint and Apricots

Curried Cauliflower Salad with Celery, Mint and Apricots

Appetizers & Sides,Lunch & Dinner,Salad & Soup

I love everything about this salad.  It is refreshing, healthy, flavorful, colorful, sweet, spicy, and totally satisfying.   It's perfect for lunch or as a side at dinner with some chicken or salmon.  It's great to take camping or bring to a potluck.   It's just a great dish. The weather has been so warm in Crested Butte that camping is on my mind.  Eric is already talking about taking our camper van to Fruita this weekend.  It's not a bad idea-  it's supposed to be 70 degrees there.   When I camp I like to prepare food at home and then bring it camping.  Mainly because I don't like doing dishes when I am camping.   This is one of those salads…

Cauliflower, Onion and Parmesan Cake (grain free)

Cauliflower, Onion and Parmesan Cake (grain free)

Appetizers & Sides,Lunch & Dinner

[amd-zlrecipe-recipe:93] This is not the kind of cake that lends to licking the bowl clean but it is a savory dish that will make you crave lunch all morning long. I happen to love cauliflower but I know that isn't the case for everyone.   This dish is so flavorful that you may not even notice the cauliflower and, as my husband did, think you are eating potatoes.   This is a recipe by Yotam Ottolenghi and it is definitely worth trying.   Again.  And again. Green Beans with Pistachio Sauce

Green Beans with Pistachio Sauce

Appetizers & Sides,Salad & Soup

This sauce is amazing.   It's the kind of sauce you could eat by the spoonful.  Try to resist. It's also very versatile.   The pistachio sauce goes well over vegetables, chicken, fish and would even be delicious over the turkey you are making next week. I made this recipe during school last year when I was assigned to teach a  15 minute cooking demonstration.  Add in another 15 minutes of prep time and that's how long this recipe takes. (more…)

Blueberry-Rosemary Soda

Blueberry-Rosemary Soda

Appetizers & Sides,Uncategorized

It's hot out there.   Even at 9,000 feet.   I can't image what it's like elsewhere around the country. This refreshing drink will surely cool you off. It's the peak of blueberry season and this is a great way to enjoy those plump sweet berries.   Combined with rosemary, lemon and honey syrup,  this is a wonderful drink to enjoy in the heat of the day. Rosemary is one of my go to herbs.  I recently  learned  that is a great herb to stimulate memory.  It has been a symbol of remembrance since ancient times.   And apparently Shakespeare knew this as a line in the play Hamlet is "There’s rosemary, that’s for remembrance: pray you, love, remember.”  New studies…

We are going camping this weekend  for three nights.    I like to camp, but I don't loooove to camp. One weekend last month my husband was going out of town and we were talking about what the kids and I were going to do.  He said, Why don't you take the kids camping? I was horrified.  I looked at him with my eyebrows raised, mouth agape. Camp.  Without you?   Why why why would I do that?  No no.... I have other things planned.  Or I will soon.  Like heading into San Fransisco for one.   Camp on my own, pshhhhh. My bestie Jamie is like my superhero.   She'll just pack up the car with her 4 kids and take them camping…
