Spice Roasted Carrots with Dates

Spice Roasted Carrots with Dates

Appetizers & Sides,Salad & Soup,Uncategorized

Have you ever had a meal at a restaurant  that you just wanted to go home and recreate?   I left the restaurant Farmshop in Marin with the need to go home and make their spice roasted carrots.   It is rare that I have the opportunity to eat at a "grown-up" establishment and even more rare that I get to enjoy a dinner with my mother and my brother.     Reservations fill up even on a Monday night so we enjoyed dinner in the bar area which is covered wall to wall in beautiful olive colored tiles made from Heath Ceramics.   It was a treat!   The food was as gratifying as the decor and the company. I had a…

Cheers!  I finished my Natural Chef program! What an inspiring 6 months it has been.  I am grateful to have found a  cooking program based on natural ingredients with a focus on nutrition.   As cumbersome as the commute was, being surrounded by like-minded classmates and educated and caring teachers, it was all worth it. I want to share with you a drink I made for our final showcase.   Dates, ginger, cardamom, lime and sparkling water.  This  non-alcoholic drink is perfect for a  brunch or for those who like a celebratory drink without the booze.    The cardamom gives it such a unique flavor and adds a great touch.  If you want to be fancy, serve it in a champagne…

Beet, Apple and Carrot Slaw

Beet, Apple and Carrot Slaw

Appetizers & Sides,Lunch & Dinner

Still trying to stick with a New Years resolution of healthier eating?   Well, here's a great cleansing dish to add into your rotation.  It's a great lunch -or even breakfast.   We might as well start the day off right!  It's easy to get stuck in the frame of mind that breakfast has to be granola or oatmeal or even eggs.   Leftover dinner usually makes a great breakfast- and it's quick because you just have to heat it up.   I challenge you to expand your idea of breakfast and enjoy this slaw one morning. Beets are an incredibly healthy vegetable full of antioxidants, magnesium and vitamin C.  They have a unique source of phytonutrients called betalains which provide anti-inflammatory and…

I am very excited to share my new and improved recipe blog with you!  With a cleaner look and an easier way to search through recipes, I hope you enjoy the site and are inspired to cook a healthy meal for you and yours! Herbed grilled shrimp is a great start.   It has been our go-to dish for parties and picnics this summer.   The fresh herbs in this dish are perfect for summer and the mango salsa adds a juicy sweetness with a little kick from the jalapeno.   If you don't have time to make the mango salsa, the herbed shrimp are great on their own too. If you do feel up to making the salsa, the easiest…

Crispy Artichokes

I watched David Rocco make a raw artichoke salad on his show months ago and my mouth dropped. "That is so easy," I thought.   He removed most of the outer leaves of the artichoke and then thinly sliced the remaining part, added some olive oil and parmesan and ate it raw.    I immediately tried it but his artichoke must have been a lot fresher than mine.   Probably picked that day from an artichoke plant in his yard.     I threw my raw artichoke salad into a skillet with some olive oil and garlic cooked it for about 5-10 minutes.  Viola, a wonderful salad. It reminded me  of a late night meal I had in New…

OR with Homemade Marinara and Whipped Feta. Before I go into this recipe I have to share some photos from my hike this morning.  I mean, come on.   They don't call Crested Butte the wildflower capital of Colorado for nothing. This was our camping spot last weekend at the blue mesa where we played in rafts and hung out with friends all weekend.   And then we came home to a beautiful rainbow! Flowers, farmer's markets, camping, hiking, outdoor music concerts and rafting have been filling up our summer.   I have missed several Sunday Farmer's Markets because we have been camping.   Max asked me about them the other day.  He likes to go and get treats and it's nice to…

Watermelon, Feta, and Basil Bites

Watermelon, Feta, and Basil Bites

Appetizers & Sides,Kid Friendly

I am not the cutesy type but these little bites are a pretty perfect addition to  a 4th of July BBQ.   I added blueberries simply to make them more festive but if you are making this for another occasion, you could leave them out. The recipe takes about 10 minutes to assemble.  It doesn't get much easier than this. Watermelons are so refreshing on a hot day.  Add a squeeze of fresh lime juice on top and it brings it to a whole new level. These bites look like tomatoes and might confuse someone (my husband, possibly) as they wonder how a tomato could possibly be so crunchy.   A curious and confused expression might paint their face until they realize…

It is that time of year again!   Just last week I was putting the finishing touches on my first homemade pinata of Spider-man for Max's 5th birthday party and now it's time to get ready for Thanksgiving.   I was looking through recipes trying to find something a little different and a lot yummy and this one from Food & Wine won me over!   I hope you enjoy it too. Sweet potatoes with a little bourbon, a little cayenne, some cinnamon, cranberries and brown sugar...de-lish.    I decided to keep the sweet potato skin on because you can actually eat the skin and you'll get more health benefits.  This dish is sweet with a nice balance of tart and just a hint…

Lima Bean, Kalamata Olive and Basil Salad

Lima Bean, Kalamata Olive and Basil Salad

Appetizers & Sides,Salad & Soup

I hope everyone has been enjoying their summer!  Mine has been great.  And busy.   Camping, picnics, music, guests,  birthday parties, shuffling kids to camps and activities, art shows, and finally, to really slow me down -back surgery.  It was long overdue and I am already feeling great.   No more hunching over in pain with a herniated disc while cooking over my stove.  I can walk with ease and it is such a great feeling! So I am finally getting a new recipe on my site.     The kids are both in school and the transition I was worried about was almost too easy this morning!   Max is at his first day of Pre-K and has been really excited to start.   Cecilia…
