Avocado and Orange Salsa

Avocado and Orange Salsa

Appetizers & Sides

Here is a fresh take on chips and salsa or chips and guacamole.    It's sort of like gualsa, but that just doesn't sound right.  Call it what you will. It is a great dish to bring to parties and has a burst of orange sweetness in every bite with some heat from the jalapenos. Avocados are another food that I didn't really eat until after college, which seems so weird now.  My son Max was eating guacamole when he was a year and a half.   But he also eats edamame which, again, I didn't even know about til maybe ten years ago.     My friend Hillary really got me hooked on avocados when we moved to Crested  Butte…

Colorful Slaw with Pecans

Colorful Slaw with Pecans

Appetizers & Sides,Salad & Soup

My family and I were vacationing in Florida last month and I would frequent the health food store in the little town of Anna Maria for select items.   I was chatting with the owner one day and somehow we started talking about antioxidants.  Maybe it was the bag of Goji Berries I had in my hand.  Anyway, she asked me if I would like to take a quick test to check my antioxidant level.   I was intrigued, the test was $20 and I didn't hesitate.   The test only takes 90 seconds, but it took her about 15 minutes to turn on her computer and get things going.  While I was waiting (and trying hard to be patient as my…

Farinata (chickpea flour flatbread) with 3 Variations

Farinata (chickpea flour flatbread) with 3 Variations

Appetizers & Sides,Baked Goods,Lunch & Dinner,Snacks & Sweets

Last week I looked in my pantry and I noticed a glass canister full of Chickpea (garbanzo bean) flour that had sat there unused for a while and I wasn't sure what to do with it.   I have added some of it to cookie recipes and other baked goods but was not happy with the flavor.  And I didn't feel like making falafals.   So I googled "chickpea flour" and what I found was Farinata (aka Cecina or Socca).   I am half Italian and spent a year studying in Italy but I (shamefully) had never heard of Farinata, which is a chickpea flour flat bread.    It was in.   A naturally gluten free flatbread was right up my alley.  I feel…

Last night Eric and I watched an interesting segment on 60 Minutes  called "Is Sugar Toxic."   It was a great program and I encourage you  to listen to the new scientific studies about what sugar is doing to our bodies.    To see the program, click  here.   The science shows that sugar feeds cancer cells, leads to heart disease, diabetes, and high blood pressure.    The non-fat craze of the 1990's led to a big increase in sugar consumption because in order to make the non-fat foods taste better, companies added sugar.   In one week many of us are consuming the same amount of sugar that our ancestors would eat over the course of one year!  And the diseases…

Sweet Potato Cakes

Sweet Potato Cakes

Appetizers & Sides,Lunch & Dinner

These are so delicious.  Really.  They are.  They are the perfect appetizer to bring to a party or would make a great lunch with a salad or soup. I was looking at some food blogs a couple of months ago and I tend to be a little tab crazy. Oftentimes there are a dozen tabs open on my browser and I can't even remember what linked me to where,  But somewhere along the way, someone recommended a cookbook that interested me and next thing I knew, I was ordering it. It is a beautiful vegetarian cookbook by Yotam Ottolenghi from his column 'The New Vegetarian' for London's The Guardian's Weekend magazine.   I looked at it for a month or…

Roasted Brussels Sprouts with Balsamic Reduction

Roasted Brussels Sprouts with Balsamic Reduction

Appetizers & Sides

I haven't written for a while because life threw us for a loop about a month ago.  One day my 4 year old son was his normal energetic self and the next day he's on the couch with a headache and not enough energy to even sit up.  Our month has been full of doctors visits which, when you live in the middle of nowhere in the mountains, turns into full day or even week long excursions.  Max had a headache, a day of vomiting, constant fatigue, and then eventually he had some double vision and facial nerve palsy.   February, leading into March has consisted of over half a dozen doctors visits, multiple ER's, CT scans, blood work, MRI,…

Beet and Fennel Cakes

Beet and Fennel Cakes

Appetizers & Sides

This might look like a rare burger, but fret not.   It is an delicious vegetable "burger" with added nuts and seeds.  It is full of protein and healthy fats and is oh so flavorful.  You can make little patties and add them on top of a salad for a delicious lunch or dinner or you can make a bigger patty and serve it with a bun.       I saw this recipe and, since I love beets, it struck me right away.  The original recipe calls for about 2 cups of shredded carrots but  I only had one carrot in my fridge.   I had  just bought fennel the day before, however,  and it was staring me down in my vegetable drawer.  Why…

Green Beans with Shallots and Almonds

Green Beans with Shallots and Almonds

Appetizers & Sides

This is a recipe I have been making for years and is adapted from Ina Garten.   It is a great side dish and always gets lots of thumbs up when I make it.    I like that you don't have to cook the green beans for too long because it mean the beans are retaining a lot more nutrients.  Shallots are in the onion family and are a little sweet. I had more photos to share but they came out blurry.    Some little peanut must have been pulling at my arm while I was trying to take photographs:)   [amd-zlrecipe-recipe:43]

Crusted Butternut Squash with Rosemary

Crusted Butternut Squash with Rosemary

Appetizers & Sides

I don't know about you but for years I would see the different varieties of squash in the grocery stores and just walk by.  Occasionally I would put one in my cart thinking I would find a recipe  only for it to sit on my counter top for months.   I would look at it from time to time and think "what am I going to do with that?"   They never seemed to mold or get soft but  before I knew it it was summer again and the squash, embarrassing as it is, was still on my countertop.   I would toss it in the trash with a pang on guilt and think, next year.   Well,  now I have a little…

Minty Beet Dip

Minty Beet Dip

Appetizers & Sides

I loooove beets.   I started eating them about 4 years ago when I saw them at the farmers market.   They are so sweet and delicious.  At first I mostly roasted them but now I take raw beets and grate them onto salad, juice them,  and I am soon going to try a recipe where you slice a really thin slice of beet and make raviolis out of it.  You'll hear about it when I give this a try:)   Beets, especially in their raw state, have many health benefits as they provide anti- inflammatory and antioxidant support and are an excellent source of folate.   The red pigment in beets are also thought to protect against the development of cancerous cells. …
