In the spirit of Valentine's Day, I give you a delectable chocolate dessert, in mini form. Have you heard of the 80/20 rule?  Eat well 80% of the time.  This recipe applies to the 20%.  Strictly for enjoyment.   And these won't disappoint. Have you had a chocolate roll before?  This is a recipe I adapted from my Aunt Nancie, who made this cake for many special occasions.  I didn't try to make one myself until this past Christmas.   This cake recipe calls for very little flour and swapping out regular flour for almond flour worked well.  I assume any gluten free flour would work okay, but I have only tested this with almond flour. My sweet girl can't get enough of these.  Little does she know one of the main ingredients is cashews.  I try to throw them in the blender and cover them with the milk and eggs before she's any the wiser.  My seven year old, on the other hand, saw the cashews  go in and became very inquisitive. These are some tasty muffins.  I love the combination of nutty oats and earthy buckwheat flour.  Add some maple syrup, molasses and cinnamon and you have yourselves a winner. Apple crisp has a soft spot in my heart.   I grew up making apple crisp with my mom every Thanksgiving and Christmas.  I prefer a crisp over a pie any day. This dessert is the perfect way to end Thanksgiving dinner.   And such a sweet start to the day after thanksgiving!!   I'm pretty sure that eating apple crisp for breakfast is acceptable in every household.  Am I Right? I mean, it's basically just oatmeal and apples.  Well, sort of. Sure, there is some other stuff in there but we won't talk about that right now. I used to think dessert wasn't dessert unless it's main ingredient was chocolate.   But I have changed my ways.   Don't get me wrong- I am still a chocolate girl.  But I am finding the joy in non chocolate desserts too.
