Sometimes you just need a little "yum" in your life.   Well, here it is!   Sure, you could take these to a Superbowl party this Sunday but you could also make them just for you and your family.  Whatever works. It is serving as a nice treat as I spend the week working on my final presentation for chef school. If you are a fudgy brownie person, only add 2 eggs.  If you like a more cake-like brownie, add 3 eggs. Who doesn't like a bowl of melted butter and chocolate?  For real....its sinful. Packing the kids lunch everyday can be a little overwhelming.   We try to keep a nice variety of healthy items in their lunchbox but it seems easy to run out of ideas.   That's where these little muffins come in.  The muffins are made with coconut flour which is packed with fiber, protein and healthy fat so it actually fills the kids up!  About 50% of the fat in coconut oil is  lauric acid which is very health supportive and anti-bacterial.  I feel good about including these in their lunch box and the kids love them. 'Tis the season for baking cookies!    Ginger cookies are a favorite of mine these grain free cookies sweetened with coconut sugar are a great treat! The kids and I are on school vacation!   We are off the Colorado tomorrow to see family and go home to Crested Butte for a week!   To say the kids are excited is an understatement.   When we told them we were going home for Christmas break Max said, "This is the best present I could ever get, ever!"  We have not only had the countdown for Christmas this year, but the countdown for Colorado! This is what I plan on enjoying Christmas morning as I watch my kids tear open wrapping paper in a mad fury.  I can dip these scones in a cup of tea or coffee and read the paper...wait what?   I mean I can show my excitement for what Santa brought as I bite into this chocolate orange deliciousness. Great News-  Max had another MRI in Denver this week and it came back totally normal!! He also saw the ophthalmologist and his optic nerves and eyesight look perfect!  We are so happy and relieved.   There is still no answer as to why this all happened but I am sure we will continue to theorize our own ideas about it.   We are slowly weaning him from his medicine.  Thank you for all the suggestions for giving him his meds.   The method that stuck was the marshmallow.    He hardly complains anymore, but always needs another something sweet to wash down the "gross marshmallow taste."  And after spending some time  at Children's Hospital,  we are ever so grateful and feel so…

  Do you ever see a recipe and you just have to try it immediately?!?  Well,  that how it was for me when I saw this recipe.   I changed a lot of the ingredients, of course, but they came out so yummy!  For the fat, I used melted coconut oil and for the flour I used a mix of whole wheat pastry and almond flour.  I like to experiment with various flours and almond flour is packed with nutrients.  I also used 2 different types of sugar but you don't have to.   I try to use more natural and nutrient dense ingredients when I can.
