This recipe is a two-fer.  You can make the smoothie and have it for breakfast and then freeze the rest in popsicle molds and have a treat for later.  While it is not quite Popsicle season in Crested Butte, I know it is right around the corner.   It's sure to stop snowing/raining one of these days and then we can eat these while picnicking in fields of wildflowers. School gets out in one week and there will be lots of kids hanging out this summer.  This will make a refreshing and delicious treat. This muffin with a big cuppa Joe is the best way to start a Sunday morning.   In my humble opinion.  And after I have my hot lemon water. Slow slow slow I go on Sunday mornings.  It seems to be the one day a week we are not rushing out of the house for school/work/soccer/skiing.  We can relax.  Chill out a little.  And enjoy a warm muffin. These are some tasty muffins.  I love the combination of nutty oats and earthy buckwheat flour.  Add some maple syrup, molasses and cinnamon and you have yourselves a winner. Snow, skiing, sledding- winter is here!  And it feels so comforting.  I am not usually ready for the cold but after spending last year in California and having what felt like a year of summer, I am ready for a change of seasons.  big sweaters, puffy jackets, warm drinks and cooked meals. Packing the kids lunch everyday can be a little overwhelming.   We try to keep a nice variety of healthy items in their lunchbox but it seems easy to run out of ideas.   That's where these little muffins come in.  The muffins are made with coconut flour which is packed with fiber, protein and healthy fat so it actually fills the kids up!  About 50% of the fat in coconut oil is  lauric acid which is very health supportive and anti-bacterial.  I feel good about including these in their lunch box and the kids love them.   My son, Max loves these waffles so in celebration of his 6th birthday, I wanted to share it with you.  Waffles are a great weekend breakfast food...or any day or night really.  Who doesn't love breakfast for dinner?   I used oat and almond flour which  are full of protein, nutrients and fiber so it's a  breakfast you can feel good about serving to your kids, or yourself,  rather than the nutrient devoid white flour variety.
