Coconut Lime Popsicles

Coconut Lime Popsicles

Kid Friendly,Snacks & Sweets

There's been a lot of popsicle making going on in my house this summer.  And it seems to be about the only thing I make that I actually stop to take a photograph of.   So while I just made some delicious chicken the other night, no photos.  All those summer salads, oops.  Next year.   For now it's about the kids.  And the kids in all of us. Here we go-  3 ingredients.  That's it.   Coconut milk, raw sugar and lime.  Add lime zest too, if you wish.  1/2 of my crew liked the zest, 1/2 not so much.   You choose. Coconut milk is a healthy source of fat made up of mostly medium chain fatty acids (mcfa's) and specifically lauric…

Strawberry Slushie

Strawberry Slushie

Kid Friendly,Snacks & Sweets

My kids and their friends were outside last week on a hot day kicking the soccer ball, jumping on the trampoline and playing zombie tag.  And they were hot.  And bordering cranky.  They needed something to cool them off and quick  but when I checked the freezer I was all out of popsicles. No big deal, I thought.  I got this. A bag of frozen strawberries, ice and some lemonade.  Viola!  A strawberry slushie was hitting their lips in 5 minutes flat. There is no dilly dallying when you have a house full of kids who are hot and tired.  You have to get them cooled off, pronto. Grab your blender (the Vitamix works very well for this application), a…

Chocolate Covered Berry Popsicles

Chocolate Covered Berry Popsicles

Breakfast,Kid Friendly,Snacks & Sweets

This recipe is a two-fer.  You can make the smoothie and have it for breakfast and then freeze the rest in popsicle molds and have a treat for later.  While it is not quite Popsicle season in Crested Butte, I know it is right around the corner.   It's sure to stop snowing/raining one of these days and then we can eat these while picnicking in fields of wildflowers. School gets out in one week and there will be lots of kids hanging out this summer.  This will make a refreshing and delicious treat. I find smoothies to be a quick and healthy breakfast option for my kids.  I start with plain organic whole milk yogurt.  Many yogurts on the market…

Ancient Grain Chocolate Chip Cookies

Ancient Grain Chocolate Chip Cookies

ALL RECIPES,Baked Goods,Cooking Tips,Kid Friendly,Snacks & Sweets

For my 100th recipe, I needed something celebratory.  I debated between chocolate and artichokes, cake or a dip.   And then I knew.   What's not to celebrate about  gluten free chocolate chip cookies that are actually crispy and delicious and a little healthier than the regular variety. Let's face it- it stinks being gluten free sometimes.  You feel deprived a lot.  You always have to look at labels and be on top of it.  Eating out or going to parties can be full of anxiety.  So we gluten free folks deserve a really good chocolate chip cookie recipe in our lives.  We do.   And here it is. These cookies are made of a mix of almond flour, teff flour and a…

Salmon and Asparagus En Papillote

Salmon and Asparagus En Papillote

Kid Friendly,Lunch & Dinner

It's great to have a simple and delicious go-to dinner that is also fast.   And that isn't macaroni and cheese or a frozen pizza.  This takes 5 minutes of prep and 15 minutes in the oven and you are done.   Ding.  Dinner is served.   It's helpful for those nights you come home late and everyone is starving or for those time you have an unexpected guest and want to make something nice, but don't have much time. You even get to relax with your feet up and enjoy a glass of wine while dinner is cooking because guess what?   There is hardly any clean up!  Yah!  Celebrate. En papillote is (more…)

Lemon Basil Loaf (grain free)

Lemon Basil Loaf (grain free)

Baked Goods,Kid Friendly,Snacks & Sweets

Panic set it.  What have I done? Why did I push for this?  Oh my goodness. What was I thinking? There I was standing in my driveway in the middle of the night in the freezing cold... so our puppy could go potty. sigh. I haven't had a pet since I was in high school.   This is a big transition for me. And then I looked up and saw the sky sparkling and twinkling- a sight I am not often awake and outside to witness.  And at 9,000 ft it's pretty spectacular.   Suddenly I wasn't so panicked. I took a deep breath and thought, it's going to be okay. It's going to be great. Our new puppy, Nutmeg, has…

Grain Free Meatballs with Spaghetti Squash Noodles

Grain Free Meatballs with Spaghetti Squash Noodles

Kid Friendly,Lunch & Dinner

This is  comfort food at it's best.  A family style meal that is so tasty.  So filling.   So good for the body and soul.  Yum! I tell Max that in high school I won't be able to make enough meatballs- he and his friends will eat them all.  But for now, he's not biting.  So until then,  I freeze the leftovers.   Eric takes them for lunch.  I defrost some here and there for an easy dinner.  They don't usually last too long.  I'll have to double the recipe when my kids get a bigger appetite and are more adventurous. To mix these meatballs, the best tools are your hands.  Get them messy and mix all these ingredients with your…

Mini Chocolate Rolls

Mini Chocolate Rolls

Baked Goods,Kid Friendly,Snacks & Sweets

In the spirit of Valentine's Day, I give you a delectable chocolate dessert, in mini form. Have you heard of the 80/20 rule?  Eat well 80% of the time.  This recipe applies to the 20%.  Strictly for enjoyment.   And these won't disappoint. Have you had a chocolate roll before?  This is a recipe I adapted from my Aunt Nancie, who made this cake for many special occasions.  I didn't try to make one myself until this past Christmas.   This cake recipe calls for very little flour and swapping out regular flour for almond flour worked well.  I assume any gluten free flour would work okay, but I have only tested this with almond flour. While it's not a hard…

Chocolate Donuts (grain free)

Chocolate Donuts (grain free)

Baked Goods,Breakfast,Kid Friendly

My sweet girl can't get enough of these.  Little does she know one of the main ingredients is cashews.  I try to throw them in the blender and cover them with the milk and eggs before she's any the wiser.  My seven year old, on the other hand, saw the cashews  go in and became very inquisitive. What kind of donuts have cashews? Why the kind you have been eating for some time. Yah.  That didn't fly.  He had recently tasted his first dunkin donuts on a trip to chicago and he was not going for my cashew ones.    Cecilia still loves these, as do I. One day I made this batter into muffins (or cupcakes- sometimes there is a…

Oat and Buckwheat Molasses Muffins

Oat and Buckwheat Molasses Muffins

Baked Goods,Breakfast,Kid Friendly

These are some tasty muffins.  I love the combination of nutty oats and earthy buckwheat flour.  Add some maple syrup, molasses and cinnamon and you have yourselves a winner. These healthy and hearty gluten free muffins are sure to start your day off on a good note.  Despite it's name, buckwheat is not actually wheat.   Buckwheat groats are gluten free and when cooked are often called Kasha. Buckwheat is high in magnesium which is so important as magnesium is needed in order for our bodies to absorb (more…)
