'Tis the season for baking cookies!    Ginger cookies are a favorite of mine these grain free cookies sweetened with coconut sugar are a great treat! The kids and I are on school vacation!   We are off the Colorado tomorrow to see family and go home to Crested Butte for a week!   To say the kids are excited is an understatement.   When we told them we were going home for Christmas break Max said, "This is the best present I could ever get, ever!"  We have not only had the countdown for Christmas this year, but the countdown for Colorado!   My son, Max loves these waffles so in celebration of his 6th birthday, I wanted to share it with you.  Waffles are a great weekend breakfast food...or any day or night really.  Who doesn't love breakfast for dinner?   I used oat and almond flour which  are full of protein, nutrients and fiber so it's a  breakfast you can feel good about serving to your kids, or yourself,  rather than the nutrient devoid white flour variety. I am not the cutesy type but these little bites are a pretty perfect addition to  a 4th of July BBQ.   I added blueberries simply to make them more festive but if you are making this for another occasion, you could leave them out. The recipe takes about 10 minutes to assemble.  It doesn't get much easier than this. Watermelons are so refreshing on a hot day.  Add a squeeze of fresh lime juice on top and it brings it to a whole new level. These are slightly addictive.  A  two thumbs up kind of bar, according to  my son, Max, which says a lot.    He calls them the best granola bars.  And yes,  that makes me a happy mama. Today marks my parents 40th wedding anniversary.    These are a couple pictures of them from my wedding day in July of 2005.   I wish my dad was here to celebrate with my mom.  They probably would have taken some wonderful trip and invited the family, as they were so generous in doing.   He loved to travel and share adventure with all of us.    We lost him to cancer 2 1/2 years ago and he is missed dearly.
