I love the colors of all the fresh vegetables and flowers at the farmers market.    Purple and red radishes, orange carrots, bright tomatoes, green lettuces, cherries and berries.  It's  a beautiful sight.   It's almost as colorful as hiking through the wildflowers in Crested Butte.     I have really grown to love radishes over the last couple years.  They are a bit spicy and pungent with a nice crunch.  And they are so good for you.   Full of vitamins and minerals, they help detox the liver and aid in digestion.  And they are naturally cooling, which we all need this time of year.   Paired with mint, sweet peas and goat cheese, this salad is refreshing on a hot day. It's great to have a simple and delicious go-to dinner that is also fast.   And that isn't macaroni and cheese or a frozen pizza.  This takes 5 minutes of prep and 15 minutes in the oven and you are done.   Ding.  Dinner is served.   It's helpful for those nights you come home late and everyone is starving or for those time you have an unexpected guest and want to make something nice, but don't have much time. This is  comfort food at it's best.  A family style meal that is so tasty.  So filling.   So good for the body and soul.  Yum! I can assure you that my Italian ancestors never ate  bolognese with zucchini noodles - but I think they missed out.  The best thing about pasta is the sauce you put over it, and let me assure you that, with the exception of my mothers sauce, this is the next best thing. It not always easy to avoid gluten, but some of us do not have a choice.  Whether you have to avoid gluten for medical reasons or you are just trying a more paleo type diet, I encourage you to try this sauce with zucchini noodles, aka zoodles.
