Homemade Gluten Free Chicken Nuggets

Homemade Gluten Free Chicken Nuggets

Kid Friendly,Lunch & Dinner,Uncategorized

I am not going to lie -  I have a box of processed chicken nuggets in my freezer for those emergency nights we all have when there is just no time.   Or for when a babysitter is coming and I am showered and dressed to go out and I'm  not about to step into the kitchen. I know we all have those nights.  And there is nothing wrong with that.  But this recipe isn't for one of those nights. (more…)

Rosemary Roasted Chicken with Purple Potatoes

Rosemary Roasted Chicken with Purple Potatoes

Lunch & Dinner

This is a one pan meal that is easy to make and easy to clean up.   It takes about 15 minutes to put together and the rest is hands off. School is back in session and family dinners are all the more important.   Mornings tend to be on the hectic side and then we all go our separate ways for a good part of the day.   Dinner is our time to be together as a family and tell each other about our day while enjoying a healthy home cooked meal. Cecilia is so excited about Kindergarten and is at a stage where she is eager to share details of her day with us.   This is probably fleeting so I…

We are going camping this weekend  for three nights.    I like to camp, but I don't loooove to camp. One weekend last month my husband was going out of town and we were talking about what the kids and I were going to do.  He said, Why don't you take the kids camping? I was horrified.  I looked at him with my eyebrows raised, mouth agape. Camp.  Without you?   Why why why would I do that?  No no.... I have other things planned.  Or I will soon.  Like heading into San Fransisco for one.   Camp on my own, pshhhhh. My bestie Jamie is like my superhero.   She'll just pack up the car with her 4 kids and take them camping…

Appetizers & Sides,Lunch & Dinner

Still trying to stick with a New Years resolution of healthier eating?   Well, here's a great cleansing dish to add into your rotation.  It's a great lunch -or even breakfast.   We might as well start the day off right!  It's easy to get stuck in the frame of mind that breakfast has to be granola or oatmeal or even eggs.   Leftover dinner usually makes a great breakfast- and it's quick because you just have to heat it up.   I challenge you to expand your idea of breakfast and enjoy this slaw one morning. Beets are an incredibly healthy vegetable full of antioxidants, magnesium and vitamin C.  They have a unique source of phytonutrients called betalains which provide anti-inflammatory and…

Roasted Chicken Breasts with Carmelized Fennel and Onion

Roasted Chicken Breasts with Carmelized Fennel and Onion

Lunch & Dinner

Caramelized onions are their own are pretty amazing but combine it with fennel and it becomes magical. This is a fairly simple dish to make and it is full of flavor.   If you have a houseful of guests coming for the holidays, this could be a great dinner.  You could do this with a whole chicken or add some chicken legs and thighs to make more. I haven't posted many meat recipes on here because I was a vegetarian when I started this blog, although it  was short lived.  After about two years my body was craving meat.  One night when I was making chicken for the kids I found myself eating a piece as I took it off the…

Curried Red Lentil Vegetable Soup

Curried Red Lentil Vegetable Soup

Lunch & Dinner,Salad & Soup

I have been at Natural Chef school in Berkeley for about a month now and I feel very lucky to be studying with such knowledgeable teachers and to be learning with like-minded people who are passionate about cooking for health.   I am over the nervous gitters of being back in school and am slowly getting used to cooking in a commercial kitchen alongside a dozen classmates. We made stocks and soups this week at school and since it is getting chillier in most places I thought I would share a soup recipe from school.   I have to say here in Northern California (or NorCal as the locals say) it still feels like summer.   But Fall is on it's way…

Appetizers & Sides,Lunch & Dinner

I am very excited to share my new and improved recipe blog with you!  With a cleaner look and an easier way to search through recipes, I hope you enjoy the site and are inspired to cook a healthy meal for you and yours! Herbed grilled shrimp is a great start.   It has been our go-to dish for parties and picnics this summer.   The fresh herbs in this dish are perfect for summer and the mango salsa adds a juicy sweetness with a little kick from the jalapeno.   If you don't have time to make the mango salsa, the herbed shrimp are great on their own too. If you do feel up to making the salsa, the easiest…

It’s been a while. It is really nice to be back on the blog. I hope you are all enjoying Spring wherever you are. I just returned from 2 amazing weeks at the beach and feel so refreshed and ready to go. Early morning walks on the beach are one of my favorite ways to start the day. I am going to miss that fine white sand on my toes. Spring at 9,000 feet is always interesting. It was nice to see almost of all the snow melted from our driveway when we got home and a warmish sunny day to greet us. The kids were a little disappointed that their sledding hill disappeared while we were away but they…
