Appetizers & Sides,Lunch & Dinner

These are so delicious.  Really.  They are.  They are the perfect appetizer to bring to a party or would make a great lunch with a salad or soup. I was looking at some food blogs a couple of months ago and I tend to be a little tab crazy. Oftentimes there are a dozen tabs open on my browser and I can't even remember what linked me to where,  But somewhere along the way, someone recommended a cookbook that interested me and next thing I knew, I was ordering it. It is a beautiful vegetarian cookbook by Yotam Ottolenghi from his column 'The New Vegetarian' for London's The Guardian's Weekend magazine.   I looked at it for a month or…

ArtichokeTart with Polenta Crust

ArtichokeTart with Polenta Crust

Breakfast,Lunch & Dinner

I can remember my first buttery bite of artichoke heart.   I was in third or four grade, sitting at our white formica dinner table (that is now my work table in my ceramic studio!) in our dining room on 2nd Street in Brooklyn, NY.   Classic 70's wallpaper - a mustard yellow with birds and butterflies, if memory serves.    I am sure I had a disgusted look on my face as I watched my parents dip leaves into a ramekin of butter and skim off the flesh of the inner part of the leaf with their teeth.    What the heck are they eating??   And they were probably telling me how delicious it was while making audible mmming sounds as…

Sweet Potato, Black Bean and Spinach Bowl

Sweet Potato, Black Bean and Spinach Bowl

Lunch & Dinner

I just got back from a beautiful X-Country ski out Cement Creek Road.    It  is my favorite winter activity and such a peaceful way to spend the afternoon.        It's one of the reasons I love living in the mountains and I feel very lucky to have this out my back door.   It's also an activity I did often with my Dad and I really miss him.   On my ski today, I took my little red ipod, the one with all my school course work and was listening to Paul Pitchford, MS who wrote a book called Healing with Whole Foods, talk about Chinese Medicine.  I kept thinking that I wouldn't be studying holistic health and nutrition if I hadn't lost…

Spaghetti Squash with Pistachio Pesto

Spaghetti Squash with Pistachio Pesto

Lunch & Dinner

I wish spaghetti squash had come into my life earlier!   This is a great dish to have for a vegetarian night or as a side dish.    It is lighter than eating  a big bowl of pasta and much better for you.  And hopefully your kids will like it.    I am trying.   I really am.  But my kids are not that adventuresome when it comes to food.   I always ask them to try what I make but with little success.   If I  buy a different type of chicken nugget than they are used to- oh boy.  It's as though I have committed a terrible crime and I have to spend then next five minutes convincing them that it will taste…

Rigatoni with Roasted Red Pepper and Toasted Almond Breadcrumbs

Rigatoni with Roasted Red Pepper and Toasted Almond Breadcrumbs

Lunch & Dinner

Happy New Year!   I hope 2012 brings good health, good food, good company and fun adventures to your life! After holiday parties, cooking nice meals for family and just being more social that I am normally,  I thought a nice, quick and simple dinner was in order.   This is a recipe from Giada DeLaurentiis and take about 15-20 minutes, which is mostly cooking the pasta!    Sometimes I change  recipes  to be gluten free, vegetarian or vegan but this time I actually added cheese. The parmesan adds a nice flavor and saltiness to the dish, especially since the breadcrumbs I used were plain.   If you have seasoned breadcrumbs, that would be a nice addition.   This dish also makes really good…

Phyllo Dough Burritos with Sweet Potatoes, Garbanzo Beans and Onions

Phyllo Dough Burritos with Sweet Potatoes, Garbanzo Beans and Onions

Lunch & Dinner

*These are not Gluten Free but you can use a GF tortilla instead of Phyllo. The other night I remembered I had some phyllo still in the fridge from the day before that had to be used.  I decided to make phyllo burritos that I had made before from the book, "eat, Drink and Be Vegan."   I took the concept of a phyllo burrito but added different ingredients.   It  makes for a cripsy and light burrito and a nice change from a corn or flour one.    You can really use what ever veggies you have in your fridge.   I usually use three staples - onion, sweet potatoes, and red or yellow peppers.   However I was out of red peppers and…
