Dark Chocolate Almond Bark with Pistachio and Sea Salt

Dark Chocolate Almond Bark with Pistachio and Sea Salt

Snacks & Sweets

I am going to make this post short and sweet.   Christmas is in one week- we are all probably too busy.   This is a joyous time of year but it is also a challenging time for many people.  Let's remember to give each other a big smile, a more intentional, deeper hug, a surprise cup of tea or coffee, a ear to listen to.  It's so easy to get caught up in our own stuff- I do it all the time.  There is a lot of sadness out in the world right now.  Let's all give a little extra love and kindness. One way I am going to spread some kindness is by sharing this delicious chocolate bark recipe.…

Sweet Potato Skins with Spinach, Onion and Bacon

Sweet Potato Skins with Spinach, Onion and Bacon

Breakfast,Lunch & Dinner

Snow, skiing, sledding- winter is here!  And it feels so comforting.  I am not usually ready for the cold but after spending last year in California and having what felt like a year of summer, I am ready for a change of seasons.  big sweaters, puffy jackets, warm drinks and cooked meals. I am a bit of a homebody and I love settling in my house in the evenings with my family playing board games, dancing, cooking and snuggling on the couch. Winter is also  the time for warming food.   While I love smoothies and raw salads, come winter I crave soups, stews and hot meals. Eating with the seasons is important for good health and this meal is perfect…

Oatmeal Apple Crisp

Oatmeal Apple Crisp

Baked Goods,Snacks & Sweets

Apple crisp has a soft spot in my heart.   I grew up making apple crisp with my mom every Thanksgiving and Christmas.  I prefer a crisp over a pie any day. This dessert is the perfect way to end Thanksgiving dinner.   And such a sweet start to the day after thanksgiving!!   I'm pretty sure that eating apple crisp for breakfast is acceptable in every household.  Am I Right? I mean, it's basically just oatmeal and apples.  Well, sort of. Sure, there is some other stuff in there but we won't talk about that right now. This is one of my favorite apple crisp recipes not only because it's gluten free but because the oatmeal gives it such a great flavor and heartiness.   And…

Cauliflower, Onion and Parmesan Cake (grain free)

Cauliflower, Onion and Parmesan Cake (grain free)

Appetizers & Sides,Lunch & Dinner

[amd-zlrecipe-recipe:93] This is not the kind of cake that lends to licking the bowl clean but it is a savory dish that will make you crave lunch all morning long. I happen to love cauliflower but I know that isn't the case for everyone.   This dish is so flavorful that you may not even notice the cauliflower and, as my husband did, think you are eating potatoes.   This is a recipe by Yotam Ottolenghi and it is definitely worth trying.   Again.  And again. Green Beans with Pistachio Sauce

Green Beans with Pistachio Sauce

Appetizers & Sides,Salad & Soup

This sauce is amazing.   It's the kind of sauce you could eat by the spoonful.  Try to resist. It's also very versatile.   The pistachio sauce goes well over vegetables, chicken, fish and would even be delicious over the turkey you are making next week. I made this recipe during school last year when I was assigned to teach a  15 minute cooking demonstration.  Add in another 15 minutes of prep time and that's how long this recipe takes. (more…)

Mini Walnut Date Tarts

Mini Walnut Date Tarts

Baked Goods,Snacks & Sweets,Uncategorized

I used to think dessert wasn't dessert unless it's main ingredient was chocolate.   But I have changed my ways.   Don't get me wrong- I am still a chocolate girl.  But I am finding the joy in non chocolate desserts too. This walnut date pie with cinnamon and orange zest is warm and comforting.   I love the flavors, especially topped with a dollop of unsweetened homemade whip cream.   What better way to end Thanksgiving dinner. Chocolate Peanut Butter Cups with Sea Salt

Kid Friendly,Snacks & Sweets,Uncategorized

Halloween is upon us.    My kids are counting down the days. Halloween isn't  my favorite holiday  but I am not going to get all Debbie Downer on you.    While I don't like the excess of candy and sugar that is consumed, there are a lot of fun things about Halloween and a lot of family activities.  We love to   carve pumpkins we picked from the pumpkin patch, toast the seeds, make  fun Halloween decorations, bake this pumpkin bread and assemble these (more…)

The Best Bolognese with Zucchini Noodles (Zoodles)

The Best Bolognese with Zucchini Noodles (Zoodles)

Lunch & Dinner

I can assure you that my Italian ancestors never ate  bolognese with zucchini noodles - but I think they missed out.  The best thing about pasta is the sauce you put over it, and let me assure you that, with the exception of my mothers sauce, this is the next best thing. It not always easy to avoid gluten, but some of us do not have a choice.  Whether you have to avoid gluten for medical reasons or you are just trying a more paleo type diet, I encourage you to try this sauce with zucchini noodles, aka zoodles. To make zucchini noodles, (more…)

Homemade Gluten Free Chicken Nuggets

Homemade Gluten Free Chicken Nuggets

Kid Friendly,Lunch & Dinner,Uncategorized

I am not going to lie -  I have a box of processed chicken nuggets in my freezer for those emergency nights we all have when there is just no time.   Or for when a babysitter is coming and I am showered and dressed to go out and I'm  not about to step into the kitchen. I know we all have those nights.  And there is nothing wrong with that.  But this recipe isn't for one of those nights. (more…)
