Rosemary Roasted Chicken with Purple Potatoes

Rosemary Roasted Chicken with Purple Potatoes

Lunch & Dinner

This is a one pan meal that is easy to make and easy to clean up.   It takes about 15 minutes to put together and the rest is hands off. School is back in session and family dinners are all the more important.   Mornings tend to be on the hectic side and then we all go our separate ways for a good part of the day.   Dinner is our time to be together as a family and tell each other about our day while enjoying a healthy home cooked meal. Cecilia is so excited about Kindergarten and is at a stage where she is eager to share details of her day with us.   This is probably fleeting so I…

Homemade Gummy Snacks

Homemade Gummy Snacks

Kid Friendly,Snacks & Sweets

My kids love  gummy snacks!   I have bought the packaged variety for a while but realized how simple and how much healthier it is to make your own.  I have been making homemade jello this past year from grass-fed gelatin that I get on Amazon.com and decided to try making gummy snacks too,  which is essentially a thicker, more condensed jello.  I use the unflavored variety of  Great  Lakes Gelatin and one bottles has about 65 1 tablespoon servings, so it lasts a long time. This recipe  takes about 5-10 minutes to make and then pop it in the fridge for 30-60 minutes to harden. Grass-fed gelatin is therapeutic in nature as it is great for (more…)

Cucumber Salad with Mint

Cucumber Salad with Mint

Salad & Soup,Uncategorized

I made this salad the other day for a party and my husband, Eric, tasted it and said. " This is the way we should always eat cucumbers."   I couldn't have asked for a better response. This is one of my favorite summer salads.  I grew up making a different version of this which included a significant amount of white sugar and white vinegar making it not so good for you.   I set out to make a healthier, yet even more delicious version of that salad. In place of white sugar,  I used (more…)

Mumford and Sons Radio is playing on Pandora and my office, which I have neglected since we moved home in mid-June is now in complete disarray as I make my way through files and folders.   For the first time in months there are no little mouths to feed, no fights to referee, no one to build logos with.  No one to interrupt me as I try to get something accomplished.  Well, until 3:30pm anyway. About 4 years ago, I vividly remember being in the playroom with my one and three year old children.  Cecilia had just started walking and  for the first time was getting into Max's "stuff" which he was not too happy about.  I was completely…

Blueberry-Rosemary Soda

Blueberry-Rosemary Soda

Appetizers & Sides,Uncategorized

It's hot out there.   Even at 9,000 feet.   I can't image what it's like elsewhere around the country. This refreshing drink will surely cool you off. It's the peak of blueberry season and this is a great way to enjoy those plump sweet berries.   Combined with rosemary, lemon and honey syrup,  this is a wonderful drink to enjoy in the heat of the day. Rosemary is one of my go to herbs.  I recently  learned  that is a great herb to stimulate memory.  It has been a symbol of remembrance since ancient times.   And apparently Shakespeare knew this as a line in the play Hamlet is "There’s rosemary, that’s for remembrance: pray you, love, remember.”  New studies…

Mizuna Greens with Cherries, Pistachios and Shaved Parmesean

Mizuna Greens with Cherries, Pistachios and Shaved Parmesean

Salad & Soup

Cherries are in abundance at my local farmer's market.  Sweet and juicy with a hint of tartness.  My kids can't get enough of them.  And I am right there with them.  I almost ate this  entire container of cherries on my way home today. Luckily  I bought two so I had plenty left for this salad.  Cherries are full of antioxidants and low in calorie.  A great snack. This salad has all my favorite ingredients: (more…)

Packing light is not a skill I have mastered.   I have had years of opportunities to practice and just as I was beginning to show some promise, I had children.   And I moved way down to the very bottom of the packing light totem pole.   I'm going to be here for a while.   Why fight it?  I am getting nice and cozy. The time is here.   Our 10 months of California living is coming to an end. (more…)

We are going camping this weekend  for three nights.    I like to camp, but I don't loooove to camp. One weekend last month my husband was going out of town and we were talking about what the kids and I were going to do.  He said, Why don't you take the kids camping? I was horrified.  I looked at him with my eyebrows raised, mouth agape. Camp.  Without you?   Why why why would I do that?  No no.... I have other things planned.  Or I will soon.  Like heading into San Fransisco for one.   Camp on my own, pshhhhh. My bestie Jamie is like my superhero.   She'll just pack up the car with her 4 kids and take them camping…
