I love the colors of all the fresh vegetables and flowers at the farmers market.    Purple and red radishes, orange carrots, bright tomatoes, green lettuces, cherries and berries.  It's  a beautiful sight.   It's almost as colorful as hiking through the wildflowers in Crested Butte.     I have really grown to love radishes over the last couple years.  They are a bit spicy and pungent with a nice crunch.  And they are so good for you.   Full of vitamins and minerals, they help detox the liver and aid in digestion.  And they are naturally cooling, which we all need this time of year.   Paired with mint, sweet peas and goat cheese, this salad is refreshing on a hot day. Happy Summer! Wow- June when by so fast and was full of very fun days.  I can not believe tomorrow is the start of July.  How did that happen. Summer is such a busy time full of outdoor fun and festivities.   If you are looking for a healthy and delicious side dish to bring to a summer gathering, try this golden beet salad.  It looks pretty and so tasty.  You can roast the beets a day or two ahead of time ( maybe at night when it's cooled down a bit- it's even been darn hot at 9,000 feet this summer!) and keep them in the fridge until you are ready. I love everything about this salad.  It is refreshing, healthy, flavorful, colorful, sweet, spicy, and totally satisfying.   It's perfect for lunch or as a side at dinner with some chicken or salmon.  It's great to take camping or bring to a potluck.   It's just a great dish. This is a wonderful and simple lunch for one.   I am often rushing from one place to the next during the day, or home cooking and working on recipes for this blog and cooking classes all the while grazing on food.  I admit I have a hard time sitting down to a nice lunch.  But when I do, I feel more calm and collected.  I try to just eat the meal.  Not check my email, Instagram account or Facebook.   I try not to multitask.  This is not easy for me.  At all.  I rarely make it through the meal just sitting there focused on the meal.  But I strive to.  One day I hope to be better at it.…

This sauce is amazing.   It's the kind of sauce you could eat by the spoonful.  Try to resist. It's also very versatile.   The pistachio sauce goes well over vegetables, chicken, fish and would even be delicious over the turkey you are making next week. I made this recipe during school last year when I was assigned to teach a  15 minute cooking demonstration.  Add in another 15 minutes of prep time and that's how long this recipe takes. (more…)

I made this salad the other day for a party and my husband, Eric, tasted it and said. " This is the way we should always eat cucumbers."   I couldn't have asked for a better response. Cherries are in abundance at my local farmer's market.  Sweet and juicy with a hint of tartness.  My kids can't get enough of them.  And I am right there with them.  I almost ate this  entire container of cherries on my way home today. We are going camping this weekend  for three nights.    I like to camp, but I don't loooove to camp. One weekend last month my husband was going out of town and we were talking about what the kids and I were going to do.  He said, Why don't you take the kids camping? Have you ever had a meal at a restaurant  that you just wanted to go home and recreate?   I left the restaurant Farmshop in Marin with the need to go home and make their spice roasted carrots.   It is rare that I have the opportunity to eat at a "grown-up" establishment and even more rare that I get to enjoy a dinner with my mother and my brother.     Reservations fill up even on a Monday night so we enjoyed dinner in the bar area which is covered wall to wall in beautiful olive colored tiles made from Heath Ceramics.   It was a treat!   The food was as gratifying as the decor and the company.
