I used to think dessert wasn't dessert unless it's main ingredient was chocolate.   But I have changed my ways.   Don't get me wrong- I am still a chocolate girl.  But I am finding the joy in non chocolate desserts too. This walnut date pie with cinnamon and orange zest is warm and comforting.   I love the flavors, especially topped with a dollop of unsweetened homemade whip cream.   What better way to end Thanksgiving dinner. Halloween is upon us.    My kids are counting down the days. My kids love  gummy snacks!   I have bought the packaged variety for a while but realized how simple and how much healthier it is to make your own.  I have been making homemade jello this past year from grass-fed gelatin that I get on Amazon.com and decided to try making gummy snacks too,  which is essentially a thicker, more condensed jello.  I use the unflavored variety of  Great  Lakes Gelatin and one bottles has about 65 1 tablespoon servings, so it lasts a long time. This recipe  takes about 5-10 minutes to make and then pop it in the fridge for 30-60 minutes to harden. Grass-fed gelatin is therapeutic in nature as it is great for (more…)

These treats are very similar to my Powder Day Energy Bars but without any nuts.  Several good friends have nut allergies in their family  and I wanted to make something delicious for them.    Nut allergies are becoming more and more common and many classerooms do not allow nuts of any kind in kids lunches.   This is a safe  and delicious treat to pack in your kids lunchbox, to bring as a class snack, or to take on outdoor adventures! Sometimes you just need a little "yum" in your life.   Well, here it is!   Sure, you could take these to a Superbowl party this Sunday but you could also make them just for you and your family.  Whatever works. It is serving as a nice treat as I spend the week working on my final presentation for chef school. If you are a fudgy brownie person, only add 2 eggs.  If you like a more cake-like brownie, add 3 eggs. Who doesn't like a bowl of melted butter and chocolate?  For real....its sinful. Packing the kids lunch everyday can be a little overwhelming.   We try to keep a nice variety of healthy items in their lunchbox but it seems easy to run out of ideas.   That's where these little muffins come in.  The muffins are made with coconut flour which is packed with fiber, protein and healthy fat so it actually fills the kids up!  About 50% of the fat in coconut oil is  lauric acid which is very health supportive and anti-bacterial.  I feel good about including these in their lunch box and the kids love them.
