Coconut Lime Popsicles

IMG_2006There’s been a lot of popsicle making going on in my house this summer.  And it seems to be about the only thing I make that I actually stop to take a photograph of.   So while I just made some delicious chicken the other night, no photos.  All those summer salads, oops.  Next year.   For now it’s about the kids.  And the kids in all of us.

Here we go-  3 ingredients.  That’s it.   Coconut milk, raw sugar and lime.  Add lime zest too, if you wish.  1/2 of my crew liked the zest, 1/2 not so much.   You choose.

Coconut milk is a healthy source of fat made up of mostly medium chain fatty acids (mcfa’s) and specifically lauric acid which helps to protect the body against viruses and infections.    School starts in a couple weeks and no one better get sick in my house!  It’s been a very fun (and long) summer.

Coconut milk is also so filling that I can (almost) guarantee that no one will ask  you for a snack for at least a couple of hours after eating this popsicle.  So if you think about it, I just bought you a little time.

Coconut Lime Popsicles

Prep Time: 5 minutes

Cook Time: 12 hours

Yield: 6-8 popsicles

Serving Size: 1 popsicle

Ingredients

  • 1 14oz can full fat Organic Coconut Milk
  • 1/4 cup sugar
  • 1/4 cup lime juice (about 2 large limes)
  • zest of 1 lime (optional)

Instructions

Put all ingredients in a blender and blend until combined.

Fill popsicle molds.

Freeze.
