Coffee Cake Muffins

coffee cake muffins 032This muffin with a big cuppa Joe is the best way to start a Sunday morning.   In my humble opinion.  And after I have my hot lemon water.

Slow slow slow I go on Sunday mornings.  It seems to be the one day a week we are not rushing out of the house for school/work/soccer/skiing.  We can relax.  Chill out a little.  And enjoy a warm muffin.

coffee cake muffins 006And they don’t take too long to make.  Throw the ingredients in a food processor and scoop it into muffin tins.   Or to be fancy, make it into a cake.

coffee cake muffins 013I adapted this recipe slightly from Elanas Pantry and it really hits the spot.  They are a great to share if you are feeling neighborly.  Go ahead.   Be neighborly.  It’s fun to surprise someone and make them smile.

Coffee Cake Muffins

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 10-12 muffins

Serving Size: 1 muffin


  • 2 1/2 cups almond flour
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 3 eggs
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • Topping:
  • 4 tbsp butter, cut into small pieces
  • 1/4 cup coconut sugar
  • 2 tbsp ground cinnamon


Preheat oven to 350.

In a food processor, add the almond flour, salt and baking soda. Pulse until well combined. Add the eggs, sugar and maple syrup and pulse until combined.

In a bowl, add chopped butter, sugar, and cinnamon and mix with your fingertips until combined and pea sized.

Line muffin cavities with paper or spray each with coconut oil. Using an ice cream scooper, scoop dough into muffin cavities. Add about a tsp of cinnamon topping on top of each muffin.

Bake for 18-20 minutes.
