Radish and Sweet Pea Salad

I love the colors of all the fresh vegetables and flowers at the farmers market.    Purple and red radishes, orange carrots, bright tomatoes, green lettuces, cherries and berries.  It’s  a beautiful sight.   It’s almost as colorful as hiking through the wildflowers in Crested Butte.

I have really grown to love radishes over the last couple years.  They are a bit spicy and pungent with a nice crunch.  And they are so good for you.   Full of vitamins and minerals, they help detox the liver and aid in digestion.  And they are naturally cooling, which we all need this time of year.   Paired with mint, sweet peas and goat cheese, this salad is refreshing on a hot day.


This is a very simple salad.  Simple ingredients.  Simple Instructions.  It tastes fresh, just like food should.  Especially in the summer.

Radish and Sweet Pea Salad

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 2-4 servings

Serving Size: 1/2 cup


  • 1 bunch of red or purple radishes, trimmed and thinly sliced
  • 1 cup sweet peas, trimmed, stringed and cut in half
  • 15-20 mint leaves, roughly chopped
  • 2 oz goat cheese, crumpled
  • Dressing
  • 1 tbsp olive oil
  • 2 tsp white wine vinegar
  • 1 tsp orange juice
  • 2 pinches of sea salt


Add the radishes, sweet peas and mint leaves to a medium serving bowl and toss.

In a small jar with a tightly fitted lid, add the dressing ingredients and shake well. Pour dressing over salad and mix well.

Sprinkle goat cheese over salad. Add a pinch of sea salt and pepper.
