I just saw a note in the corner of my screen and it was from WordPress wishing me a Happy 1 year blogging anniversary! I had totally forgotten. But Yay! 1 year.
Here is a great recipe to share with you today as we are in the thick of the Holiday Season. This is the perfect thing to bring to holiday parties. It only takes about 20 minutes tops- and 15 of those minutes are the nuts baking so you can do something else…like take a quick shower.
I prefer this with just Cashews because I think they taste better and looked nicer, but they were good with mixed nuts too. I am a little ticked at myself for not taking a picture last week before I brought the Spiced Cashews to a party. The dish was an “Oh my gosh you have to try those Cashews” kinda dish. People who didn’t know I made them said that to me which was pretty fun.
And Cashews are good for you too! Full of good fat, said to help reduce cancer risk, high in magnesium with helps our bones and full of good vitamins and minerals. Toss in a tablespoon of Cayenne and you are all set. Cayenne is really good for digestions, colds and inflammation among other things.

Spiced Cashews
4 Cups Raw Cashews ( or a mix of raw-peanuts, walnuts, almonds and cashews)
2 tsp Rosemary, chopped finely
1 TBSP Honey
3/4 – 1 TBSP Cayenne Pepper
2 tsp fine Sea Salt
1/2 tsp Pepper
Preheat Oven to 350. Line a baking sheet with parchment paper.
In a large bowl, combine the Rosemary, Honey. Cayenne, Salt and Pepper until it is a paste. Add the Cashews and mix using a wooden spoon.
Spread the Cashews evenly on the baking sheet and bake for about 15 minutes. Stir halfway through. Cool and Serve!
Rosemary is the one thing that produces 365 days a year in my garden. I never tire of it (well, after all, I am Italian!) Will try this recipe.
